3 Ingredients – No Bake - Easy
I really like Lara Bars and seeing how their ingredients were really simple, I decided to try making some for myself.
Like I said, the basic ingredients are really simple. And you can really have fun trying out different combinations of nuts and fruit you like.
Throw all the ingredients in your food processor/blender and blend for 1 minute or desired consistency. You will end up with a big sticky ball of dough.
Put some wax paper or plastic wrap in a 8”x8” or larger cake pan. Press the dough into the pan until it's an even thickness. Place in the pan in the freezer for 30 minutes.
Then you can cut the bars into any shape you like.
One trick I use is sprinkling coconut on the cut bars so they don’t stick together when you put them in a Ziploc bag. I store the bars in the freezer and they are chewy, not hard when I eat them. You can keep them in the fridge too if you like them a little softer. If you leave them out, they will get pretty soft and mushy.
The really fun part is playing with the ingredients. I like Almonds and Cherries, but you can use Apricots, Cranberries, Pecans, Walnuts, whatever you like. You can also add fun ingredients like Shredded Coconut, Dark Chocolate Chips, Cacao Powder, Chia Seeds, Cinnamon, even Lemon or Lime Zest.
I like to add a handful of nuts and dark chocolate chips to the blender after everything is blended together and just pulse it a couple times so I have some big crunchy bits of chocolate or nuts in my bars.
