Guilt & Gluten Free Pancakes (dairy free - lo-carb optional)
• 3 bananas
• 2 tablespoons butter or coconut oil (for dairy free) melted
• 2 eggs
• 1 cup oat flour or rolled oats, coconut flour (for low carbs)
• ½ teaspoon baking soda
• ½ teaspoon salt (optional)
• ½ teaspoon ground cinnamon, nutmeg or vanilla extract to taste
I throw everything in my food processor/blender (except the egg shells!) and I just use rolled oats instead of oat flour. Of course you can substitute Coconut flour if you are on Atkins or Paleo diets.
You can also mix in some blueberries, bananas, almonds, walnuts or whatever after blending.
Then just cook em up just like regular pancakes! A little coconut oil or butter on a hot skillet. They're so tasty I don’t even use syrup, just top with fresh berries!
These also make great snacks to refrigerate and have when you get the urge for some carbs or sweets.
